Soaring with Eagles

I've been trying to keep my weekend cake load down just a bit, to make sure I have time to put my full attention to each cake order PLUS not totally forget my family. :-) So this weekend I had two tiered cakes.

The first cake is a three-tiered buttercream cake for a man's birthday. His wife wanted him to have a very special cake, and of the many interests he has, she narrowed it down to a bald eagle. We decided to keep it simple but attractive. The topper is handmade out of gumpaste, done in several steps over the course of two weeks. It was built up on a dowel rod, so that I could put it down into the cake. Inside the top tier is a large straw filled with melted chocolate for support, to help anchor the eagle to the cake without smashing down into the cake with its weight.

Then I took some wire, coated it in chocolate, and arranged it on the cake...adding more chocolate where necessary, as branches.

The tiers were airbrushed and buttercream accents/borders were added...then finally, a fondant banner piped with the message:






The next cake is a wedding cake delivered to the New Hope, PA area. This is a yellow cake filled with whipped chocolate ganache and raspberry preserves....iced in whipped buttercream, wrapped in navy blue ribbon, and then garnished with flowers provided by the florist and left on-site for me to add to the cake:



Sometimes the most beautiful cakes are the timeless, classic designs!!! I love this style.
